Kabocha Squash French Toast


-1 medium Kabocha Squash

-4 Large Eggs

- 1/4 teaspoon ground Cumin

- Pinch of Salt

- Vegetable oil (or oil of choice)

- 8 slices of Crusty Bread


-Cut squash in half and scoop out the seeds.

-Place on cooking sheet and bake with the cut side up. 400 degrees for 35 minutes

-Allow to cool so you can pick up. Scoop out the insides and puree.

-In a bowl, mix 1/4 cup squash puree, 4 eggs, 1/4 tsp cinnamon, and a pinch of salt.

-Heat a large skillet over medium heat and oil lightly.

-Dip the bread into the egg mixture and coat all sides. Please in the skillet and cook until golden brown. (about 3-4 minutes on each side) Continue until the bread is cooked all the way through. 

-Drizzle with honey or syrup and enjoy!
